How to Brew with a Gaiwan
Place your tea leaves in the bowl. Pour boiling water just under halfway, then immediately drain through the lid as a strainer to rinse the leaves. Inhale the awakened aroma, then refill with fresh water — pouring down the inside wall to set the leaves swirling. Drink directly from the gaiwan, or decant into a fair cup or individual tasting cups. Works beautifully with any tea type; simply adjust water temperature and steeping time to suit.
